However, compared to lap cheong, sausages require stricter preservation methods, otherwise they are prone to mold and spoilage and cannot be stored for a long time. Today I saw a question asking if homemade sausages are still edible after a year? This needs to be considered in two situations. If stored properly, it's fine for a year; if the storage method is improper, it cannot be eaten after four or five months.
Today, I will share the correct way to preserve sausages.
The first method is refrigerator refrigeration. When making sausages, we usually choose sunny days. The made sausages should be air-dried outdoors for about five days. Generally, in sunny weather, 4 to 5 days of drying is ideal. The dried sausages are neither dry nor hard; they have some elasticity when squeezed by hand, and the surface is smooth and not sticky. After bringing such sausages home, put them directly into a plastic bag, seal it, and then refrigerate them.
The advantage of this refrigeration method is that the sausages are not hard or dry, and they are very elastic and chewy. However, this method only preserves them for three months. After three months, the sausages are prone to mold and spoilage, so you need to calculate the time and finish them within three months.
The second method is freezing preservation. This method can keep sausages fresh for more than a year. This method requires the sausages to be dried more thoroughly beforehand. Normally, 4 to 5 days of drying is sufficient, but for freezing preservation, at least a week is needed. At this time, most of the moisture in the sausages has been dried out, and the meat will be firmer. When pressed by hand, there is almost no elasticity, and it is relatively hard. At this time, bring the sausages indoors, put them in a sealed plastic bag, and freeze them. This method allows you to eat fresh sausages for more than a year without spoilage or mold.
However, sausages stored using this method should be fully thawed before eating, then steamed in a pot, and then covered and steamed for another ten minutes before serving. This makes the sausages softer and chewier. These are two methods for storing sausages. Choose different storage methods according to your situation, so you can enjoy delicious sausages.
